Crème Caramel Ice Cream with Brunella Milk and Hazelnut

To make this recipe you will need:

PRODUCT For a TRAY
White Base 2,000 kg
Crème Caramel Paste 0,200 kg
Milk 0,100 kg
Fine Salt 0,006 kg
Brunella Milk and Hazelnut q.b.
TOTAL 2,306 kg

Preparation

Spread a layer of Brunella Milk and Hazelnut along the bottom of a tub and place in blast chiller until it hardens.
Pour the White Base into a jug and add the Crème Caramel Paste, fine salt and milk.
Mix everything together carefully with a whisk or mixer and pour the mix into the ice cream machine.
After removing, pour the ice cream over the layer of Brunella Milk and Hazelnut until a smooth surface is formed.
Place back into the blast chiller until it hardens.
After removing the tub from the blast chiller, cover with another layer of Brunella Milk and Hazelnut and put back in the blast chiller until it hardens.
