Crema Antica Ice Cream with Brunella Dark Chocolate

To make this recipe you will need:

PRODUCT For a TRAY
White Base 2,000 kg
Crema Antica Paste 0,100 kg
Milk 0,060 kg
Brunella Dark Chocolate q.b.
TOTAL 2,160 kg

Preparation

Spread a layer of Brunella Dark Chocolate along the bottom of a tub and place in a blast chiller until it hardens.
Pour the White Base, Crema Antica Paste and milk into a jug.
Mix everything together carefully with a whisk or mixer and pour the mix into the ice cream machine.
After removing, pour the ice cream on the layer of Brunella
Dark Chocolate until a smooth surface is formed.
Place back into the blast chiller until it hardens.
After removing the tub from the blast chiller, cover with another layer of Brunella Dark Chocolate and put back in the blast chiller until it hardens.
